Rhubarb Margarita

Matt Steigerwald from the Lincoln Cafe in Mount Vernon, shares his recipe for Rhubarb Margarita.


  • 2 cups rhubarb
  • 1 cup water
  • 3/4 cup sugar
  • 3/4 cup lime juice
  • 1/2 cup tequila
  • Ice


Add water and sugar to sauce pan and bring a rolling boil.  Cook rhubarb in boiling sugar-water for 5 minutes until soft. Pour water and rhubarb into blender, puree, then strain. Put rubarb in refridgrator  until chilled through.

Once chilled,  add lime juice and tequila. Shake with ice. Then pour over ice.

Garnish with rhubarb swizzle stick and enjoy.
