Pumpkin Bread Pudding with Caramel Apple Sauce

Nothing like a warm bread pudding made from our favorite squash! The caramel apple sauce adds just the perfect amount of sweetness to satisfy every sweet tooth.

Pumpkin Bread Ingredients

  • 4 Tbsp. unsalted organic butter (softened)
  • 1 ¾ cups of organic flour
  • ½ tsp. salt
  • 1 tsp. baking soda
  • ½ tsp. baking powder
  • ½ tsp. all spice
  • 2 tsp. cinnamon
  • ½ tsp. ground nutmeg
  • ½ tsp. ground cloves
  • 1 cup sugar
  • ¼ cup organic canola oil
  • 8 oz. pumpkin puree
  • 2 large organic eggs
  • 1 cup of water


Preheat oven to 350 Degrees

Mix flour, salt, baking soda, baking powder and spices in a separate bowl. In a standing mixer with paddle, beat butter, sugar, and oil at high speed until fluffy. Add pumpkin and mix, adding eggs one at a time until incorporated. Slowly add flour mixture and mix until incorporated. Transfer mix to a greased loaf pan and cook at 350 degrees for 70-75 min. Check with toothpick in center to be sure it’s done.

Bread Pudding Ingredients

  • 2 cups heavy whipping cream 
  • 1 cup whole milk 
  • 6 large egg yolks 
  • ½ cup sugar
  • 1 whole vanilla bean 
  • 4 Tbsp. maple syrup 
  • 2 Tbsp. Bourbon 
  • 1 ½ cups pumpkin puree
  • 1 cup caramel sauce


Cube and toast pumpkin bread, transfer to a lightly buttered baking dish. Add heavy whipping cream to a saucepan, bring to medium heat. Add vanilla bean. Add whole milk and bring to a simmer. In a separate dish, mix egg yolks, pumpkin puree, sugar, and maple syrup.

Add pumpkin mixture to simmering cream mixture. Let simmer for another minute until thickened, then strain custard mixture into a new bowl.  Pour custard mixture over dried pumpkin bread evenly. Let bread pudding mixtures sit and soak for 15 minutes. Bake in oven at 350 degrees for 45-50 minutes.

Caramel Sauce Ingredients

  • ½ cup water
  • 2 cups sugar
  • 1 Tbsp. apple cider vinegar
  • 1 cup heavy whipping cream
  • 1 cup apple cider 
  • 1 Star Anise 
  • ½ Tbsp. whole cloves
  • ½ tsp. ginger
  • ¼ tsp. nutmeg
  • 2 Tbsp. bourbon
  • Vanilla Ice Cream


In a saucepan, add water, sugar, and apple cider vinegar. Cook over high heat and let caramelize. Approximately 8 minutes.

In a separate sauce pan, add heavy whipping cream, apple cider, star of anise, whole cloves, ginger, nutmeg. Stir and and let simmer.

Strain cream mixture into a separate bowl. Slowly add cream mixture to the caramel mixture. Add bourbon and let thicken.

Remove bread pudding from oven, and let cool. In a glass, add 1 serving bread pudding, pour sauce over, and add a side of ice cream. Enjoy!
