Grilled Tofu with Pineapple Stir Fry


  • 1 Tbsp. fresh thyme minced
  • 2 cloves garlic minced
  • 1 Tbsp. soy sauce
  • 1 Tbsp. lemon juice
  • 1 Tbsp. vegetable oil.
  • 1 block of extra firm tofu, sliced
  • ½ onion, sliced
  • 1 carrot, sliced
  • ½ cup cabbage, chopped
  • 1 stalk celery, sliced
  • ½ green pepper sliced
  • 1 tomato sliced
  • ½ cup sweet and sour sauce (to taste)


Preheat oven 350 degrees. In a small bowl, whisk together thyme, garlic, soy sauce, lemon juice, and vegetable oil. Add tofu to a baking dish. Pour marinade over tofu, and bake in oven for 10-15 minutes.

Remove tofu from oven. Heat grill pan to medium high heat. Add tofu and grill until crisp and golden. Add pineapple to same grill pan and cook until heated through.

In a separate frying pan, heat oil to high heat. Add onion, carrot, cabbage, celery, green pepper and tomato. Fry together. Season with soy sauce and sweet and sour sauce.

Plate tofu over vegetables with pineapple. Serve and enjoy!
