Feta and Spinach Wrap


  • 4 oz. feta cheese, crumbled
  • 1 pound fresh spinach
  • 2 Tbsp. butter
  • 1 clove garlic, finely chopped
  • Salt
  • 2 Tbsp. toasted pine nuts
  • 1 tsp. grape seed oil
  • 2 sheets phyllo dough *
  • Olive oil


Heat skillet to medium high. Melt butter and add garlic. Cook until fragrant. Add a couple of handfuls of spinach to the skillet. Add a pinch of salt. Let it cook down and wilt. Repeat adding spinach until all has been cooked down. Once spinach is sauteed, remove from heat and put through a strainer to remove excess moisture. Let cool.

Once spinach is cool to the touch, add it to a bowl with feta, pine nuts, grape seed oil. Mix together.

Preheat oven to 375 degrees. On a clean surface lay out phyllo dough, and brush with olive oil. Add half of the feta mixture and roll up. Repeat with second sheet of phyllo. Bake 10-14 minutes until dough is cooked through and golden brown. Remove from oven and let cool. Serve and enjoy

*substitute phyllo dough with a crepe instead.
