Cauliflower Rice Pilaf

The idea of replacing starch with vegetables in our diets appeals to a lot of us. Making cauliflower rice is a great way to do that, but does it taste good? We think so, but the cauliflower definitely needs some help from other flavors. This dish is light, savory and a great way to incorporate garlic scapes!


  • 6 c. cauliflower florets
  • 3 Tbsp. olive oil
  • 2 cloves garlic
  • ¼ c. chopped garlic scapes
  • ½ tsp. salt
  • ¼ c. toasted sliced almonds
  • ¼ c. chopped fresh parsley
  • 2 tsp. lemon zest


Pulse cauliflower florets 2 cups at a time in a food processor until chopped into rice sized pieces. Be careful not to get them too small.

Heat oil in a large skillet over medium high heat. Add garlic scapes and cook until tender, about 1 minute. Add garlic and cook 30 seconds more. Add the cauliflower rice and salt and stir. Cook until softened, about 3-5 minutes. Remove from heat and stir in almonds, parsley and lemon zest.
