Mulled Wine Pears with Blue Cheese and Walnuts

A holiday appetizer from chef David Baruthio.

Ingredients

  • 2 whole semi-ripe pears (peeled, leave stem on)
  • blue cheese
  • whole walnuts
  • mulled wine
  • 1 cup spinach
  • fresh cracked pepper

Directions

Bring mulled wine to a simmer. Place pears in the wine. When pears are soft, remove from wine on to plate to cool. On a bed of spinach, plate one whole pear in middle, and cut the other pear into bite sized chunks and add walnuts. Add slices of blue cheese and a sprinkle of pepper to plate and serve.
