Jacques Torres

Pastry chef at Le Cirque in New York, Jacques Torres visits Julia Child in her kitchen. Torres creates a chocolate presentation with pralines. Torres demonstrates his technique to tempering dark and white chocolate. Once the chocolates have been melted (by using either a double boiler or the microwave), Torres applies the melted chocolate to florist-style plastic wrap, bubble wrap, and molds.
