Katy's Oat Granola Bars

A delicious granola bar recipe from chef Katy Meyer. 


  • 3/4 cup dates
  • 1/4 cup coconut oil
  • 1/4 cup honey
  • 1/4 cup almond butter
  • 1 1/2 cup rolled oats
  • 1/3 cup toasted pumpkin seeds
  • 1/4 cup dried cranberries
  • 1/4 cup chocolate chips
  • 1/3 cup almonds
  • 1/4 cup date paste (you can use honey for this as well)


In a small saucepan, add coconut oil, honey, and almond butter. Set to a low heat and melt.

Add dates to a food processor and blend until smooth. Put dates into a large bowl. Add oats, pumpkin seeds, cranberries, chocolate chips, almonds and date syrup. Stir to combine. 

Take the melted ingredient in the saucepan and combine to the oat mixture. Stir to combine. 

In a parchment lined baking dish, add oat mixture and press everything down to that everything is even. 

Place in a freezer for 15 minutes so that the mixture can set up. Cut into bars. Serve and enjoy!
