Caramelized Leek Sauce

A bright and onion rich sauce that goes well with any number of vegetables or protiens. 


  • 1 Tbsp. olive oil
  • 1 Tbsp. butter
  • 1 leek chopped
  • 1 white onion, chopped
  • 1 shallot, chopped
  • 1 clove of garlic, chopped
  • Salt and Pepper
  • 2 cups vegetable stock
  • 1/2 cup coconut milk
  • 1 lemon, juiced
  • 1 tsp, fresh thyme
  • 1/2 tsp. coriander


Heat olive oil and butter in a medium pan. Add leeks, onion, shallots, garlic, salt and pepper. Cook until onions are translucent and soft. Transfer to a food processor or blender. Add vegetable stock, coconut milk, lemon, and thyme. Blend until smooth. Return to pan and heat to a simmer.

Add sauce to fresh asparagus, fish, rice or tempeh. Serve and enjoy!
