Shaved Asparagus Salad with Dijon Vinaigrette

Chef Joshua Frederick creates a simple shaved asparagus salad, and the flavor speaks for itself! 

Ingredients

  • 1 bunch Asparagus
  • 1/4 cup toasted almonds, crushed
  • 3 cups mizuna (or fresh arugula)
  • shaved parmesan, to taste
  • salt
  • pepper
  • 2 Tbsp. dijon mustard
  • 1/3 cup olive oil
  • 1 Tbsp. honey
  • 1 Tbsp. apple cider vinegar.

Directions

Cut the tops off of the asparagus, and half them. Using a mandolin or a shredder, shave asparagus spears into thin strips.

In a small bowl add mustard, olive, oil, honey, salt and pepper. Mix to combine, 

In a large mixing bowl, add mizuna and shaved asparagus *about 50/50 mix. Top with almonds, shaved parmesan, salt, pepper, and dijon vinaigrette.  Mix to combine. Serve and enjoy.
