Caramelized Onion Flatbread

Ingredients

1 large yellow onion, sliced
3 Tablespoons olive oil, divided
3 tablespoons Taleggio cheese (Brie works too)
3 tablespoons blue cheese ( Gorgonzola works too)
1 pound bakery pizza dough
1 1/4 teaspoons salt
1/4 cup fresh sage

Directions

Preheat Oven to 400 degrees F.

In a large skillet, over medium-low heat saute the onions in 2 tablespoons olive oil for 20 minutes or until golden brown and caramelized. Remove from the heat and set aside.

Turn dough onto a lightly greased 12-inch pizza pan. Top with the caramelized onions and sprinkle with fresh herbs and cheeses. Season with salt and pepper, to taste. Drizzle with olive oil and bake at 400 degrees F until golden brown, about 5-10 minutes until crust is golden brown and cheese is melted.
