Duck Tacos with Chipotle Sour Cherry Salsa

Chipotle Sour Cherry Salsa Ingredients

2 cups sour cherries
1 chipotle chili in adobo sauce, chopped
1/4 cup red onion diced
2 tablespoons chopped garlic
1 handful fresh basil
1 tablespoon balsamic vinegar
Salt and pepper to taste.

Chipotle Sour Cherry Salsa Directions

Puree everything in a food processor until smooth. Heat a saucepan to medium-low heat and simmer the salsa to remove any excess liquid.

Duck Tacos Ingredients

1 pound duck breast

1 tsp cayenne

Salt and pepper

2 cups chipotle cherry salsa

12 small flour tortillas

2 cups cabbage slaw tossed into 2 tablespoons sour cream

4 oz feta cheese

Duck Tacos Directions

Score skin and fat off of duck without cutting into meat. Season duck with cayenne, salt, and pepper and let marinate for 20 minutes.

Heat ovenproof pan over medium heat. Place duck fat side down and let cook until fat has rendered. 2-3 minutes. Place pan into preheated 400 degree oven for 8 minutes. Remove duck and let rest for five minutes. Drain fat from pan and add salsa to deglaze pan and simmer to remove any excess liquid.

Assemble taco with cabbage slaw and feta cheese.

Serve and enjoy.
