Danish Aebleskiver

First generation Danish American, Annette Andersen, tells us about her heritage, and makes a traditional Danish dish, aebleskivers!

Recipe:

1 cup flour
1/2 tsp salt
1 tsp. baking soda
1 cup buttermilk or thick sour cream
1 beaten egg yolk
1 stiffly beaten egg white
Shortening for greasing pan

Combine beaten egg yolk with buttermilk. Sift in dry ingredients and beat until smooth. Fold in one stiffly beaten egg white. Heat aebleskiver pan on stovetop. Add shortening to grease each cup of pan. Fill each cup with batter. Cook carefully. When baked on one side, turn quickly with fork to cook other sides (until full circle is browned and cooked through).
