Fredonia Pork Casserole

Ingredients

Ingredients: 1/4 pound egg noodles; 2 cups finely chopped celery; 1 pound pork ground steak (or other pork appropriate for a casserole as you desire); 2 small onions, finely chopped; 1 can tomato soup; 3/4 cup American cheese cubed (or a bit more if you would like it cheesier); 1/3 cup water

 

Instructions

Cook noodles according to package directions  Cook celery and onion in olive oil until tender, add meat and cook till done. Mix in remaining ingredients and place in greased casserole dish.  Cover and bake in 350 degree oven for 1 hour.

I was grew up in the small town of Fredonia, Iowa at the junction of the Iowa and Cedar Rivers.  My mom, Izola Carey, was a wonderful cook and this is her recipe for a casserole she oven served our family of seven.  Izola was of German-Irish descent and my dad was an extremely hearty eater.  We owned a small grocery store in Fredonia and my dad did his own butchering and had a knack for grinding the best ground pork steak.
