Grandmother's Ebelskivers

Muffin like dessert in a cast iron pan

Ingredients

2 cups flour

2 cups milk

4 eggs

4 heaping teaspoons of baking powder

a little salt

Instructions

Separate eggs, beat egg white till stiff. In another bowl beat egg yolks a little then add milk and then flour. Fold egg whites add baking powder. Enjoy with syrup.

The Great Dane's Tradition

We all have roots where we come from, that is how we make our family tree. However, sometimes branches of the tree decide to go out on a limb of their own. My Great Grandfather several years ago came from Denmark to start a brand new life in America. One of the things, my Great Grandfathers brought along with him was this Danish recipe of Ebelskivers. It soon became a family recipe that my family still makes to this day on Christmas Eve. These Ebelskivers have been shared with some of the most important people in my life while making great memories. Although some of those people have passed away now, I still get to celebrate this family tradition, and reminisce on all the good times.
