Oatmeal Munchies

Ingredients

1/2 cup brown sugar

1/2 cup white sugar

1/2 cup butter

1 egg

1 1/4 tsp. vanilla

1 cup Gold Medal flour

1/2 tsp. baking powder

1/2 tsp. baking soda

1/4 tsp. salt

1 tsp. cinnamon

1/4 cup toasted coconut

3/4 cup toasted rolled oats

Instructions

Toast coconut and rolled oats on separate baking sheets and set aside. 

Cream sugars and butter. 

Add the egg and vanilla. 

Combine the remaining ingredients in a separate bowl. 

Gradually add the dry ingredients to the sugar mixture and mix well. 

Add the toasted coconut and toasted rolled oats. 

Drop by teaspoonfuls onto ungreased baking sheet. 

Bake at 350 for 10 minutes.

My family definitely has a strong connection to Iowa. Our farm has been in the same family name for 166 years. I was born exactly 100 years to the day when the farn was purchased from the US Government. My grandfather was born on the family farm and my mom was proud to say she was born in the same house. Recently I read a story about the top state fairs in the US. The Iowa State Fair was included as one of the best. At the Iowa State Fair there's something for everyone and competitions that celebrate our country's farming heritage. With it's fun, family atmosphere, the Iowa State Fair is an ideal place to make lasting memories. Mom dearly loved her "State Fair Family" and looked forward to visiting with those special friends every year. She had a passion of baking cookies for the Iowa State Fair. Her oatmeal munchies topped my list of favorites. She exhibited cookies for many years until she had a stroke in 2013. Mom's wishes were for me to continue the family tradition of entering food at the Iowa State Fair and the rest was history! She passed away March 1, 2017 and I am entering these cookies as a tribute to her.. mom's oatmeal munchies bring back many fond memories for me which I will hold in my heart forever. Her "perfect little cookie" definitely inspired me to carry on her legacy and great Iowa tradition. That's why I believe mom's Great Iowan Tradition truly makes this a great Iowan recipe!
