Irish Boxty

Ingredients

2 medium potatoes, grated
2 c. flour
1 tsp. baking powder
1 tsp. salt
1 c. mashed potatoes
1 1/4 c. buttermilk
butter for the pan

Directions

Combine flour, baking powder and salt in a small bowl and set aside.

In a large mixing bowl, combine grated potato and mashed potato. Add the flour and mix well.

Slowly add the buttermilk, being careful not to overmix. It should be a thick, firm batter. Add more buttermilk if needed.

Heat a frying pan on medium and add a pat of butter. Add a generous scoop of batter and flatten into a big pancake. Fry until golden brown on both sides.

Add more butter and repeat until the batter is finished.

Enjoy with either sweet or savory toppings. Some like their boxty with sour cream and scallions, others with more butter and jam. It's also a delicious part of a traditional Irish breakfast.
