Bacon Potato Salad

Ingredients

1 pound bacon, frozen and cubed
5 russet potatoes, cubed
1/2 cup green onions
1/2 cup olive oil
1/2 cup white vinegar
1/2 cup seasoned gourmet rice vinegar
Salt and Pepper to taste

Fry bacon until cooked. Cook potatoes until cooked through. In a large bowl, add potatoes, cooked bacon, bacon fat, green onions, olive oil, white vinegar, and seasoned gourmet rice vinegar. Add salt and pepper to taste. Mix thoroughly. Serve and enjoy.
